Crispy Coriander Pakoras (Recipe)

This recipe yields delicious and crispy coriander pakoras. The optional rice flour adds extra crispness, but the pakoras will be perfectly tasty without it. Adjust the chili quantities to your preferred spice level.
Ingredients:
* 2 cups fresh coriander leaves, chopped
* 1 cup gram flour (besan)
* 1/2 cup rice flour (optional)
* 1-2 green chilies, finely chopped
* 1 teaspoon ginger paste
* 1 teaspoon cumin seeds
* 1 teaspoon mustard seeds
* 1/2 teaspoon turmeric powder
* 1/2 teaspoon red chili powder
* 1 teaspoon salt (adjust to taste)
* 1 tablespoon lemon juice
* Water, as needed
Tempering Ingredients:
* 1 tablespoon oil
* 1 teaspoon mustard seeds
* 1 teaspoon sesame seeds (optional)
* A pinch of asafoetida (hing)
