Quick Green Papaya Roti: South Indian Style


## Green Papaya Roti

This recipe yields a unique and flavorful roti featuring the refreshing taste of green papaya. The addition of semolina (rava) is optional but contributes to a softer texture.

Ingredients:

* 2 cups rice flour
* ¼ cup semolina (rava), optional
* 1 cup green papaya, grated
* 1 onion, finely chopped
* ½ cup carrot, grated
* 2 green chilies, finely chopped
* A small handful of curry leaves, chopped
* 2 tablespoons coriander leaves, finely chopped
* 1 teaspoon ginger paste
* 1 teaspoon cumin seeds
* ½ teaspoon salt
* Water, as needed for kneading
* Oil, for roasting

Instructions:

1. Combine Dry and Wet Ingredients: In a large bowl, combine the rice flour, semolina (if using), grated green papaya, chopped onion, grated carrot, green chilies, curry leaves, coriander, ginger paste, cumin seeds, and salt. Mix thoroughly, ensuring all ingredients are well incorporated. Gently squeeze the mixture to release some moisture and further combine the ingredients.

2. Knead the Dough: Gradually add water, a little at a time, to the mixture and knead until a smooth and soft dough forms. The amount of water needed will depend on the moisture content of the papaya.

3. Cook the Roti: You can cook the roti on a banana leaf, baking paper, or a damp cloth. For the latter method, take a ball of dough and gently pat it into a thin circle on the damp cloth. Carefully transfer the roti to a hot griddle (tawa). Press gently.

4. Remove the Cloth and Cook: After about a minute, carefully peel off the damp cloth. Flip the roti once the base is cooked. Add a small amount of oil to the griddle and cook both sides until lightly golden brown.

5. Serve: Serve your delicious green papaya roti hot with your favorite chutney. Enjoy!
