## Vegan Beetroot Tikkis: A Delicious and Easy Recipe

Ingredients:

* 1 medium beetroot (or 2 small beetroots), peeled and finely grated
* 3 large potatoes, boiled and mashed
* 4 teaspoons olive oil
* Chopped coriander leaves, to taste
* 1 small onion, finely chopped
* Salt, to taste
* Chaat masala, to taste
* Garam masala, to taste
* 2 teaspoons amchur powder (dried mango powder)
* 1 teaspoon black pepper

Instructions:

1. Sauté the Beetroot: Heat 2 teaspoons of olive oil in a pan over medium heat. Add the grated beetroot and sauté for 5-10 minutes, until slightly softened.

2. Combine Ingredients: Add the mashed potatoes, chopped onion, and coriander to the pan. Stir in the salt, chaat masala, garam masala, amchur powder, and black pepper. Mix well to combine all ingredients thoroughly.

3. Shape the Tikkis: Transfer the mixture to a bowl and allow it to cool slightly. Once cool enough to handle, shape the mixture into small, flat, round patties (tikkis).

4. Cook the Tikkis: Heat the remaining 2 teaspoons of olive oil in a non-stick pan over medium heat. Carefully place the beetroot tikkis in the pan and cook for 2-3 minutes per side, or until golden brown and heated through.

5. Serve: Serve the hot beetroot tikkis immediately with your favorite chutney, such as coriander or mint chutney. Enjoy!
